Vegan Frozen Christmas Dessert

  1. Open the refrigerated can of coconut milk and scoop out the solidified cream at the top into a mixing bowl. Save the liquid for another use or discard it. Using an electric mixer or whisk, whip the coconut cream until it becomes light and fluffy. Set aside.

  2. In a large bowl, combine the chopped and diced fruits, lime zest and juice, orange zest and juice, lemon zest and juice, and coconut water or watermelon juice. Mix well until all the fruit is evenly coated with the citrus and juice mixture.

  3. Fold in the whipped coconut cream into the fruit mixture until it is evenly distributed throughout the fruit.

  4. Pour the fruit and coconut cream mixture into a large freezer-safe container or individual serving containers. If using toppings, sprinkle them evenly over the top of the mixture in each container.

  5. Cover the containers with plastic wrap or lids and place them in the freezer for at least 4 hours or overnight until firm and set.

  6. When ready to serve, remove the containers from the freezer and let them sit at room temperature for about 5-10 minutes to soften slightly. Scoop the dessert into bowls and enjoy this refreshing and festive Vegan Frozen Christmas Dessert!
