Vegan Gluten-Free Burger

- 1 cup cooked quinoa or brown rice
- 1 can black beans or chickpeas, drained and rinsed
- 1/2 cup almond flour or oat flour
- 1/4 cup finely chopped onion
- 2 cloves garlic, minced
- 2 tablespoons nutritional yeast
- 2 tablespoons ground flaxseed mixed with 6 tablespoons water (flax egg)
- 2 teaspoons cumin
- 2 teaspoons chili powder
- 1/2 teaspoon salt
- Freshly ground black pepper, to taste
- Olive oil or cooking spray for greasing
Instructions:

Preheat your oven to 375°F (190°C). Grease a baking sheet with olive oil or line it with parchment paper.

In a large mixing bowl, mash the cooked quinoa or brown rice until it's broken down into small pieces but still has some texture. Add in the drained and rinsed black beans or chickpeas and mash them as well, leaving some whole for texture.

Stir in the almond flour or oat flour, finely chopped onion, minced garlic, nutritional yeast, flax egg, cumin, chili powder, salt, and black pepper until well combined. The mixture should be thick and hold its shape when formed into patties. If it's too wet, add more flour; if it's too dry, add more mashed beans or quinoa.

Form the mixture into four large or six small patties and place them on the greased baking sheet. Bake for 25 to 30 minutes, flipping them halfway through to ensure even cooking. The burgers should be golden brown and firm to touch when they're done.

Remove from the oven and let them cool for a few minutes before serving on your favorite bun or lettuce wrap with your choice of toppings and condiments. Enjoy your delicious and healthy vegan gluten-free burgers!
